Peruvian chef Eduardo Vargas is a bit of a celebrity on the F&B scene in Shanghai.
He’s the man behind one of the city’s longest running foreign restaurants, Azul, and so many other staple joints like Osteria, iiiiit! and Brasa Chicken.
It takes a lot of cahones to survive in this city that eats restaurants faster than people can order food. And Eduardo shed some light on how he’s done it, and what the one thing he regrets.
